YOU GET SOME CHEESE! YOU GET SOME CHEESE!
EVERYONE GETS SOME CHEESE! Yes, that’s right, there’s cheese for everyone because of a 1.4 BILLION POUND surplus of cheese in the US. Is everyone lactose intolerant now? I, personally eat a lot of cheese (thanks keto and my regular eat what I want when I want diet). But what gives? According to NPR, milk production has increased, but milk consumption has decreased. The USDA says that Americans drank 149 pounds of milk in 2017 whereas, folks were drinking 247 pounds in 1975.
Listen, I get it, dairy has not been great for many, especially those who are lactose intolerant and suffer from the bubble guts at the mere sight of it, but that just seems excessive, no? As for me, I can have cheese and ice-cream with no problems, but if I have a glass of milk (I won’t because I am an adult), or a milkshake (only in the privacy of my home) my tummy will react violently and it’s not worth it. Unless it’s a milkshake from Black Tap, then all bets are off…I’ll just make sure that’s my last stop before heading home lol. So I can see why there’s a milk problem, but CHEESE! Who doesn’t love cheese? Maybe the prices need to go down? Or they just need to do better? European cheeses don’t seem to be having that much of an issue. I can’t call it.
In the meantime and in between time, here are some recipes to help you use up some of that cheese. Yes the holidays are over and the calories actually mean something now, but who doesn’t want a night of comfort with cheese?
I made this for the first time in 2015 and was initially intimidated because of the roux and cheese sauce process, but with a little patience and careful attention to detail, I made it happen. And it was delicious. I make a very good macaroni and cheese as well, but I love trying new recipes that include cheese and pasta lol. The best thing here about the recipe are the photos. This was extremely helpful during the roux process.

We’re going to keep that same energy with cheese and bread and go the old-fashioned route with a good ol’ buttery grilled cheese. And if you’re feeling fancy, throw out those processed cheese slices and get some cheddar or swiss, some GOOD BREAD! Butter and grill that joint up. I don’t know what it is about Friday nights and nachos but getting home on a Friday night with some takeout from one of the many Mexican restaurants in my hood really makes me happy.
