FMS READS: CIA's Professional Chef

A long while ago I was laid off of a pretty cushy, yet unfulfilling job and needed something to do with my time.  So I went to Barnes & Noble to roam and came across a super cookbook.  It was huge and apparently a textbook for culinary students.  The Professional Chef from the Culinary Institute of America to be exact.  I didn't purchase the book while at the store because...unemployed, but I did eventually order it off of Amazon...don't judge me.

Seeing this book gave me an idea, if I teach myself everything that the students of CIA (not that CIA) learn, then I can get started with a catering/personal chef business.  During that period of unemployment, I did manage to put a couple of things together for friends, but decided that catering may not be my lane, but I can still utilize whatever I learned in the book for my everyday wanna be Barefoot Contessa dreams.  In the end, the book is everything.
